Dylan is home sick today.
He's been fighting something off
for a few days but it finally caught
up with him.
To cheer him up, I decided to make
a special breakfast....
Puff Pancakes.
They're sort of like popovers I guess.
I cannot remember who I got the
recipe from. If it's YOU, please let
me know and I'll gladly give you credit.

Ok, here is the recipe:
preheat oven to 400 degrees
1 cup flour
1 cup milk
1/4 cup melted butter
6 eggs
dash of salt
(I halved the recipe since it's only
two of us today)
Here's everything:

You want the batter smooth, so use a mixer.
Generously grease muffin tins.
GENEROUSLY, I'm serious here.
Fill tins 1/2 way.
Yeah, I know, I need new muffin tins.

Cook for 15 minutes or until they are
puffy and golden brown:

As you can see, I had a little trouble
getting the first one out. Run a knife
around the edges.
I served them with syrup, powered sugar and fruit.

well I think I figured out why you have not time to scrap! I am going to try the pancakes on Sunday. Least I can do as I will be going out of town for the week... maybe they will remember me :). Your blog is hysterical. Can I ask, do you draw the pix then take a photo of them, then upload and write? this seems time consuming, am I crazy? Plz post new pix w/o curls... very curious!

Those look YUMMY! Actually they do look a lot like what I THOUGHT were popovers, or at least what I've always made for popovers. But then I just found out that you're supposed to have a special popover pan for popovers so I have no idea what I've been making all this time.

I've never seen puff pancakes in muffin tins! I'm going to have to do this. Also my recipe doesnt have butter *in* the batter, I put my butter directly in the pan - which eliminates the need to grease the pan. So i'll try this with like a tbsp of butter in each muffin cup. yum!
