I've been making "double dinners"
each Sunday night and bringing the second
to my parent's house each Monday morning
on my way to work so my mother wouldn't have
to worry about cooking too much.
Even though her treatment is going well,
she's very tired.
So the other day she sent me home with
a recipe and some skirt steak.
Made it last night.
Soooo good.
Marinate skirt steak in:
olive oil
6 cloves of garlic, sliced thin
2 tablespoons of fresh rosemary
Cook in pan on stove
Salt and pepper
Reserve marinade
5-7 minutes each side.
Remove steak.
Wipe pan clean.
Add remaining marinade
Cook till garlic is browned.
Spoon over steak.
Made this last night, did not
cook marinade, decided not
to have too much garlic.
Delish!
Served with simple spinach salad
and baked spuds.
Yum.
Quick and Easy.
Try it.

Hi Kerry,
Glad you had a good time at camp school. You are such a great daughter to bring dinner to your parents!
Good to hear Mom is doing so much better. Tired - I can certainly understand.
I need some of your great "visual aid drawings" of your life - when will the next episode be??
Take care
Sounds like yum!!! Glad your mom's doing okay too. :-)
That sounds absolutely delish! I am always looking for new marinades to try.
Our favorite marinade for steak and chicken is 1/2 italian dressing 1/2 terriaki sauce. Very yummy for steak tips.
Thanks for the compliment on the story over on my blog. It has been waaaaay quiet over there without you:)
This sounds delish! Gotta try it!
